This could be my Joseph Guinne b.1843, Father Hugh but, whereas I can see the possibility of someone being Christened as Joseph later calling themselves Josh, I wonder how likely it would be that someone Christened as Josh would later give their name as Joseph on officials documents e.g. census and marraige docs

Josh can be an abbreviation for Joseph.

Yes To save space it could be written as Jos and with the h up above the others letter.
